Riker's Island

As New York City's main jail complex, Rikers Island has a daily inmate population of approximately 14,000 with 7,000 officers and 1,500 civilians to operate the 10 major detention facilities on the 413-acre island. The overall Cook/Chill Program called for the construction of a central cook/chill production facility and the conversion of existing cook/serve kitchens on Rikers Island to rethermalization kitchens. LiRo provided CM services for the rehabilitation of kitchens at seven key facilities on Rikers Island that required phased retrofit of the existing kitchens in order to maintain food service operations during construction.

Prior to the Cook/Chill Program, LiRo managed the construction of the Pilot Pantry Program which involved the renovation of four pantries for operational testing purposes.
